Limes are the fruits of the several species of lime trees that belong to the genus of citrus plants. Depending on the origin, a distinction is made between the real lime (Citrus aurantiifolia) from Mexico and the common lime (Citrus latifolia), which was originally native to Tahiti and Persia. Lime trees are much smaller and more compact than orange or lemon trees, but are closely related to them. You belong to family : Diamond family (Rutaceae). The not frost-hardy and evergreen plants reach a maximum height of two to four meters.

Since the skin of the limes is very thin, these fruits are not suitable for peeling. They taste very sour and are therefore not consumed raw, but are primarily used in the form of juice and syrup as an ingredient in many popular cocktail recipes. Compared to lemons, however, their taste is much more complex and aromatic, which means that limes and the dried leaves of trees are a popular spice in the kitchen, primarily in the Caribbean and Southeast Asia. They give dishes with fish and seafood a piquant, sour and tart note. In the USA they are known as one of the basic ingredients of the famous Key Lime Pie.
