The oil is freed from hydrocyanic acid compounds (&#8220;debittered&#8221;).<\/p>\n<p>The <b>almond tree<\/b><i>(Prunus dulcis<\/i>, older synonym: <i>Amygdalus communis L.<\/i>) is a <a title=\"Species (Biology)\" href=\"https:\/\/de.wikipedia.org\/wiki\/Art_(Biologie)\" rel=\"noopener\">plant species<\/a> of the <a title=\"Genus (Biology)\" href=\"https:\/\/de.wikipedia.org\/wiki\/Gattung_(Biologie)\" rel=\"noopener\">genus<\/a> <i><a title=\"Prunus\" href=\"https:\/\/de.wikipedia.org\/wiki\/Prunus\" rel=\"noopener\">Prunus<\/a><\/i> in the <a title=\"Rosaceae\" href=\"https:\/\/de.wikipedia.org\/wiki\/Rosengew%C3%A4chse\" rel=\"noopener\">rose<\/a> family (Rosaceae). Its <a title=\"Seed (plant)\" href=\"https:\/\/de.wikipedia.org\/wiki\/Same_(Pflanze)\" rel=\"noopener\">seeds<\/a>, the <b>almonds<\/b>, also known as <b>almond kernels<\/b>, are used as a food and cosmetic.  The species name <i>dulcis<\/i> &#8220;sweet&#8221; refers to the sweet core \u2013 with the bitter almonds <i>Var. Amara<\/i>, from Latin <i>amarus<\/i> &#8220;bitter&#8221;.<\/p>\n<p><strong>Bitter almonds are mainly used for alcoholic beverages (Amaretto).<\/strong> They give it the specific taste note and also the bitter almond oil, as a baking ingredient is known. The content of hydrogen cyanide in bitter almonds is up to 3,000 milligrams per 100 kilos.<\/p>\n<p><strong>Extraction of <span style=\"font-size: 12pt;\">bitter almond Essential oil:<\/span><\/strong><\/p>\n<p>The ground seeds are first freed from the fatty oil by pressing and then the bitter almond oil with water vapor is distilled from the pressed cake macerated with water.<\/p>\n<p>The main component of the uncleanoiled oil is benzaldehyde with approx. 95 benzaldehyde, in addition it contains 2 to 4 hydrogen cyanide and almond acid nitril, benzoin and aldehyde resin. If you mix the distillate with wine spirit, bitter almond water is produced; Almond acid nitril dissolved in water and wine spirit- Essential water.<\/p>\n<p>Hydrogen cyanide-free bitter almond oil is produced by shaking with lime milk and iron sulfate, which forms calcium iron(II) cyanide. This is followed by further steam distillation.<\/p>\n<p>It is used as spice oil in the pastry shop and bakery, in liqueur production, also generally for food additives and perfume.
